Elin Paynes Brownies


Makes 16 small brownies or 9 large ones.

150g best quality dark chocolate
2 tbs best quality cocoa powder
100g butter
200g light Muscovado sugar (regular light brown is fine, but good Muscovado gives it a tad more depth)
2 eggs, lightly whisked
1/2 tsp vanilla extract (the real thing - no faking!)
75g white flour
1/2 tsp baking powder
pinch salt
200g chopped pecans

square tin, lined w/ baking parchment, 20.5 cm (8 in)

Preheat oven to 180 C/350 F/gas 4

  • Melt the chocolate.
  • Cream butter and sugar.
  • Beat in eggs, vanilla extract and melted chocolate (make sure chocolate isn't too hot or it'll scramble the eggs).
  • Combine flour, cocoa powder, baking powder, salt, chopped nuts.
  • Stir the dry ingredients into the wet ingredients until just combined.
  • Spread mixture into tin and bake for 25 mins - the center should still be gooey-ish.
  • Cut into squares for serving.
  • Whipped cream or ice cream and berries are always wonderful additions!
